The Recipe Corner

From the Collectin of Iris Harvey Smith

Fresh Peach Cobbler
6-8 ripe peaches
5 slices white bread
1 stick butter, melted
1 1/4 cups sugar
2 tablespoons all-purpose flour
1 egg


Slice peaches and place in a buttered 9x9-inch baking dish. De-crust bread and cut each slice into 5 strips and place over fruit. (Will make 2 layers of lattice over fruit.)

Melt butter and mix with sugar and flour. Add egg and mix well. Drizzle over bread. Sprinkle with cinnamon or nutmeg, if desired. Bake in a 350 degree oven 30-35 minutes until top browns. Serve warm with your favorite topping.

Serves 6-8.

Pears may be substituted for peaches. Add 2 tablespoons of water to fruit layer.
